This product is obtained from
the eyeround (item 2468).
All subcutaneous and intermuscular
fat, connective tissue, membrane
and the silverskin of the
m. semitendinosus are removed.
After these procedures,
the muscular tissue is exposed
as red meat, that is,
completely free of visible fat
and external connective tissue.

IT IS OBTAINED FROM THE OUTSIDE (ITEM 2466) BY THE REMOVAL OF THE FLAT, CUTTING THROUGH THE CONNECTIVE TISSUES BETWEEN THE M. BÍCEPS FEMORIS AND M. SEMITENDINOSUS. TENDON OF THE LATTER IS TRIMMED OFF AND FAT COVER PARTIALLY REMOVED.
